Week 3 – Rock Cakes

A quick little bake to start the week off and fill the cake tins.


8oz Self Raising Flour

1tsp Baking Powder

4oz Margarine

2oz Granulated Sugar

6oz Dried Mixed Fruit

1 Egg


Demerara Sugar


Simply rub flour, baking powder and margarine together. Add in granulated sugar and and fruit. Bind the mixture together with the egg and a little milk. Spoon the mixture into a baking tray and sprinkle each cake with a little Demerara Sugar. Bake at 170 for around 15 minutes.

Perfect with a cup of tea!
